DRUNKEN LOBSTER TAIL SKEWERS


Ingredients:

2 lobster tails, thawed if frozen
1/4 cup olive oil
1/4 cup white wine (you can also use beer or any other alcohol of your choice)
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon paprika
Salt and pepper to taste
Wooden skewers, soaked in water for at least 30 minutes to prevent burning


Instructions:

Preheat your grill to medium-high heat.
Prepare the lobster tails by splitting them in half lengthwise. Use kitchen shears to cut through the top of the shell and then use a knife to cut through the meat. Carefully remove the meat from the shell, keeping it attached at the base of the tail.
In a small bowl, whisk together the olive oil, white wine, minced garlic, lemon juice, paprika, salt, and pepper to create the marinade.
Place the lobster tail halves in a shallow dish and pour the marinade over them, making sure they are well coated. Allow the lobster tails to marinate for about 15-20 minutes.
Thread the marinated lobster tail halves onto the soaked wooden skewers, making sure to thread through the meaty part of the lobster, not the shell.
Once the grill is hot, place the skewers on the grill and cook for about 4-5 minutes per side, or until the lobster meat is opaque and firm, and the edges are slightly charred. Baste the skewers with any remaining marinade while grilling.
Remove the skewers from the grill and serve immediately, garnished with fresh lemon wedges and chopped parsley if desired.
