Ingredients:
5 pounds of chitterlings (cleaned and prepped)
Water
Vinegar
Salt
Pepper
Onion
Garlic
Hot sauce (optional)
Butter (optional)
Instructions:
Prep the Chitterlings: Clean the chitterlings thoroughly by rinsing them several times under cold running water. Remove any excess fat and membrane. Some people soak them in water with vinegar or lemon juice to reduce the strong smell and to help clean them further.
Boil the Chitterlings: Place the cleaned chitterlings in a large pot and cover them with water. Add a splash of vinegar to help tenderize them and reduce the odor. Bring the water to a boil, then reduce the heat and simmer for 2-3 hours, or until the chitterlings are tender.
Season the Chitterlings: Once the chitterlings are tender, drain them and return them to the pot. Season them generously with salt, pepper, chopped onion, minced garlic, and any other seasonings you prefer. You can also add a few dashes of hot sauce if you like your chitterlings spicy.
Cook the Chitterlings: Continue to cook the seasoned chitterlings over low heat for another hour or so, stirring occasionally to ensure they are evenly seasoned and heated through. You can also add a pat of butter for extra flavor, if desired.
Serve: Once the chitterlings are fully cooked and seasoned to your liking, they are ready to serve. They are often served hot with cornbread, collard greens, or other traditional soul food sides.
