Ingredients:
4 organic bone-in chicken thighs
1 tbsp olive oil
2 tsp kosher salt
1/2 tsp black pepper
2 tsp Italian seasoning blend or herbs de provence
Instructions:
Clean and pat dry chicken thighs with paper towels and place on a plate or in a bowl
Drizzle chicken with olive oil and season chicken liberally with salt, pepper and herb de provence
Massage the chicken with the seasonings being sure to get the seasoning all over the chicken thighs and under the skin
To a cast iron skillet, add a drizzle of oil and pan-sear chicken thighs for 5 minutes per side on medium high heat
Finish cooking the chicken thighs in the oven at 450 degrees for 15 minutes until fully cooked through and internal temperature has registered 165 degrees F
Notes:
Cook time will vary based on the size of your chicken thighs–larger chicken thighs will take longer, up to an hour. Use a meat thermometer to be sure and when juices run clear when meat is pierced with a fork it’s done! I don’t recommend boneless thighs for this method.
