Ingredients:
1 large yellow onion chopped
3 tbsp mustard
3-4 pounds corned beef brisket + spice packet
2 tsp garlic minced
2 bay leaves
1 pound baby red potatoes cut in half
3 large carrots chopped
2 cups low-sodium chicken broth
1 small head of cabbage cut into small wedges
Instructions:
Chop onion and place it in the bottom of a 6-quart slow cooker. Then, rub the mustard over the corned beef and place on top of the onions.
Add spice packet, garlic, bay leaves, potatoes, and carrots. Then, pour in chicken broth.
Cover and cook on low for 8-10 hours. Two hours before cook time is up add cabbage wedges. Cover and continue to cook.
Slice brisket before serving and enjoy!
