Baked chicken , yellow rice, lima beans , green beans and cornbread


Baked Chicken:

Ingredients:

4 bone-in chicken pieces (such as thighs or drumsticks)
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper

Instructions:

Preheat your oven to 400°F (200°C).
In a small bowl, mix together paprika, garlic powder, onion powder, dried thyme, salt, and black pepper.
Rub the chicken pieces with olive oil, then sprinkle the spice mixture evenly over the chicken, making sure to coat all sides.
Place the seasoned chicken on a baking sheet or in a baking dish.
Bake in the preheated oven for about 35-40 minutes, or until the chicken is cooked through and the skin is crispy and golden brown.
Yellow Rice:

Ingredients:

1 cup long-grain rice
1 3/4 cups chicken broth
1/2 onion, finely chopped
1 clove garlic, minced
1/2 teaspoon ground turmeric
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter (optional)

Instructions:

In a medium saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until the onion is translucent.
Add the rice to the saucepan and stir to coat it with the butter and onion mixture.
In a separate bowl, mix together the chicken broth, ground turmeric, paprika, salt, and black pepper.
Pour the chicken broth mixture into the saucepan with the rice. Stir well.
Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
Lima Beans and Green Beans:

Ingredients:

1 cup lima beans, frozen or fresh
1 cup green beans, trimmed and cut into bite-sized pieces
2 tablespoons butter
1/2 onion, finely chopped
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper


Instructions:

In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until the onion is translucent.
Add the lima beans and green beans to the skillet. Season with salt and black pepper. Stir well to combine.
Reduce the heat to low, cover the skillet, and cook for about 10-15 minutes, or until the beans are tender.
Cornbread:

Ingredients:

1 cup cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup buttermilk
1/4 cup unsalted butter, melted
1 egg, beaten

Instructions:

Preheat your oven to 400°F (200°C). Grease a 9-inch square baking pan or a cast-iron skillet.
In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
In a separate bowl, mix together the buttermilk, melted butter, and beaten egg.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Pour the batter into the prepared baking pan or skillet.
Bake in the preheated oven for about 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
Once everything is cooked, serve the baked chicken alongside the yellow rice, lima beans, green beans, and cornbread. It’s a delicious  meal that brings together comforting flavors and textures.
