Slow Cooker Honey Soy Chicken


Ingredients:

4 chicken leg  (skin-on, bone-in)
1/2 cup low-sodium soy sauce
1/4 cup honey
1/4 cup hoisin sauce
2 tablespoons tomato paste
2 tablespoons rice vinegar
2 cloves garlic, minced
1 teaspoon grated ginger
1/4 teaspoon red pepper flakes (optional)
2 tablespoons cornstarch
2 tablespoons water
Sesame seeds and chopped green onions for garnish


Instructions:

In a bowl, whisk together soy sauce, honey, hoisin sauce, tomato paste, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). This will be the sauce for the chicken.
Place the chicken leg in the slow cooker and pour the sauce over them, ensuring they are coated evenly. Make sure the chicken skin is facing up. Cover the slow cooker with the lid.
Cook on low heat for 6 to 7 hours or on high heat for 3 to 4 hours, or until the chicken is cooked through and tender. The skin should be crispy.
Once the chicken is cooked, remove it from the slow cooker and transfer it to a baking sheet. Preheat your oven’s broiler to high.
In a small bowl, mix together the cornstarch and water to make a slurry. Stir the slurry into the sauce in the slow cooker, mixing well.
Brush some of the sauce over the chicken leg pieces and place them under the broiler for 2 to 3 minutes, or until the skin becomes crispy and caramelized. Keep an eye on them to avoid burning.
Remove the chicken from the oven and brush it with additional sauce.
