Ingredients:
- 2 lbs chicken (drumsticks, thighs, wings)
- 1 cup buttermilk
- 2 cups all-purpose flour
- 1 tablespoon paprika
- 1 tablespoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground mustard
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Vegetable oil for frying
Directions:
1. In a large bowl, combine buttermilk, paprika, cayenne pepper, garlic powder, onion powder, salt, black pepper, white pepper, smoked paprika, ground cumin, ground mustard, dried oregano, and dried thyme. Mix well.
2. Add the chicken pieces to the buttermilk mixture, ensuring they are well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.
3. In a separate bowl, combine flour, paprika, cayenne pepper, garlic powder, onion powder, salt, black pepper, white pepper, smoked paprika, ground cumin, ground mustard, dried oregano, and dried thyme. Mix well.
4. Remove the chicken from the buttermilk mixture, allowing any excess to drip off. Dredge each piece in the seasoned flour mixture, pressing to adhere.
5. Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
6. Fry the chicken in batches, being careful not to overcrowd the fryer or skillet. Cook for 12-15 minutes, turning occasionally, until golden brown and crispy.
7. Remove the chicken from the oil and drain on paper towels.
