Ingredients:
2 ribeye steaks (about 1 inch thick)
6 large sea scallops, patted dry
2 tablespoons olive oil
3 tablespoons unsalted butter
2 cloves garlic, minced
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh thyme leaves
Salt and black pepper to taste
Directions:
1. Season the steaks and scallops with salt and black pepper.
2. Heat a skillet over medium-high heat and add 1 tablespoon olive oil. Once hot, add the steaks. Cook for about 4-5 minutes on each side for medium-rare. Remove from the skillet and let rest.
3. In the same skillet, add another tablespoon of olive oil. Place scallops in the skillet, and sear for about 1-2 minutes on each side, until a golden crust forms. Remove and set aside.
4. Lower the heat to medium and add butter to the skillet. Once melted, add garlic, parsley, and thyme, cooking for about 1 minute until fragrant.
5. Return the scallops to the skillet to coat them in the herb butter sauce.
6. Serve the steaks and scallops together, drizzling any remaining herb butter over the steak.
