Ingredients:
1 quart peanut oil
1 cup stone-ground fine cornmeal
1 cup all-purpose flour
1 teaspoon seafood seasoning (recommended: Old Bay)
1/2 teaspoon kosher salt
1/4 teaspoon hot smoked paprika
1/4 teaspoon freshly ground black pepper
6 (7 to 9-ounce) catfish fillets
Directions:
1. Heat peanut oil in a deep fryer or large skillet to 350°F (175°C).
2. In a shallow bowl, mix together cornmeal, flour, seafood seasoning, salt, paprika, and black pepper.
3. Dredge each catfish fillet in the cornmeal mixture, ensuring both sides are evenly coated.
4. Carefully place the coated catfish in the hot oil and fry for 5-7 minutes or until golden brown and the fish flakes easily with a fork.
5. Remove the catfish from the oil and drain on paper towels to remove excess oil.
