Ingredients:
2 chicken breasts, thinly sliced
2 tablespoons jerk seasoning
1 tablespoon soy sauce
1 tablespoon olive oil
1 red bell pepper, julienned
1 green bell pepper, julienned
1 yellow bell pepper, julienned
1 onion, sliced
2 cloves garlic, minced
1 tablespoon ginger, minced
1/2 cup pineapple chunks
Salt and pepper to taste
Cooked rice, to serve
Directions:
1. In a bowl, combine chicken slices with jerk seasoning and soy sauce. Let marinate for at least 30 minutes.
2. Heat olive oil in a large skillet over medium-high heat. Add marinated chicken and cook until browned and nearly cooked through, about 5 minutes.
3. Add the bell peppers, onion, garlic, and ginger to the skillet. Stir-fry for another 5 minutes, or until the vegetables are just tender.
4. Stir in pineapple chunks and cook for an additional 2 minutes. Season with salt and pepper to taste.
5. Serve hot over cooked rice.
