Ingredients:
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1 lemon, zest and juice
1 teaspoon red pepper flakes
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Directions:
1. In a bowl, combine olive oil, garlic, lemon zest, lemon juice, red pepper flakes, salt, and pepper.
2. Add shrimp to the marinade and let sit for 15-20 minutes, but not longer to avoid the lemon cooking the shrimp.
3. Preheat grill to medium-high heat.
4. Thread the shrimp onto skewers.
5. Grill the shrimp for 2-3 minutes on each side or until they are pink and opaque.
6. Garnish with chopped parsley and serve with lemon wedges on the side.
