Ingredients:
2-3 slices of bologna
2 eggs
2 slices of white bread
Salt and freshly ground black pepper to taste
Butter or oil for frying
Instructions:
Heat a non-stick skillet over medium heat and add a little oil or butter.
Place the bologna slices in the skillet. You might want to make a small cut from the center to the edge of the bologna slices to prevent them from curling up as they cook.
Fry the bologna slices for about 1-2 minutes on each side until they are nicely browned. Then remove them and set aside on a plate.
In the same skillet, crack the eggs and sprinkle them with salt and pepper. You can either scramble them or fry them sunny-side up, over-easy, or over-medium, depending on your preference.
While the eggs are cooking, you can optionally toast the bread slices.
Assemble the sandwich by placing the fried bologna on one slice of bread, topped with the cooked eggs, and then the second slice of bread.
Cut the sandwich in half, if desired, and serve hot.
