Ingredients:
4 bone-in pork chops, about 1 inch thick
1 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, finely chopped
1 tablespoon fresh thyme leaves
2 cloves garlic, minced
Salt and pepper to taste
2 eggs, beaten
1/4 cup all-purpose flour
2 tablespoons olive oil
Directions:
1. Preheat your oven to 400°F (200°C).
2. In a shallow dish, combine panko breadcrumbs, Parmesan cheese, parsley, thyme, garlic, salt, and pepper.
3. Place flour in a separate shallow dish, and beaten eggs in another.
4. Dredge each pork chop in flour, shaking off the excess, then dip in beaten eggs, and finally coat thoroughly with the breadcrumb mixture.
5. Heat olive oil in a large ovenproof skillet over medium-high heat. Once hot, add the pork chops and sear until golden brown, about 3-4 minutes on each side.
6. Transfer the skillet to the oven and bake for 10-15 minutes, or until the pork chops are cooked through and the crust is crispy.
