Ingredients:
8 chicken pieces (legs, thighs, breasts)
2 cups buttermilk
1 tablespoon hot sauce
2 cups all-purpose flour
1 tablespoon paprika
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon cayenne pepper
Salt and black pepper to taste
Vegetable oil for frying
Directions:
1. In a large bowl, whisk together buttermilk and hot sauce. Add chicken pieces, making sure they're fully submerged. Cover and marinate in the refrigerator for at least 2 hours, or overnight.
2. In a large, shallow dish, mix flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
3. Remove chicken from the buttermilk mixture, allowing excess to drip off. Dredge each piece in the flour mixture until well coated.
4. Heat oil in a deep fryer or large pot to 375°F (190°C). Fry chicken in batches, being careful not to overcrowd the pot, for about 15-18 minutes, or until golden brown and cooked through. Internal temperature should reach 165°F (74°C).
5. Place fried chicken on a wire rack over a baking sheet to drain excess oil.
