Ingredients:
For the Jerk Sauce:
4 organic scotch bonnet peppers (habanero peppers)
1 medium yellow onion chopped
6 cloves garlic
6 stalks of scallion
1/4 cup white vinegar
1/4 cup soy sauce
1 ½ teaspoons sea salt
½ tablespoon ground black pepper
1 tablespoon grated fresh ginger
2 tablespoons fresh pimento seeds
2 tablespoons brown sugar
1 teaspoon of freshly grated nutmeg
2 tablespoons olive oil
7 sprigs of fresh thyme
lime juice, from 1 lime
For the Jerk Chicken:
1½ pounds chicken wings, washed and pat dry
1 small onion, sliced
1 bell pepper (any color), sliced
Instructions:
For the Jerk Sauce:
Add all the ingredients to a blender and blend until completely incorporated
Once completely blended, reserve 1/4 cup of marinade and set it aside.
In a large bowl or resealable bag, combine the chicken wings and the jerk sauce. Allow to marinate for at least 1 hour but preferably overnight.
Preheat oven to 400 degrees.
Arrange the chicken on a large baking pan or grill. Add the sliced onions and bell peppers to the pan, and bake for 40 minutes flipping the chicken halfway through.
After 40 minutes, broil the chicken for 5-7 minutes until crisp and slightly blackened.
Remove the chicken from the pan and toss with the 1/4 jerk sauce reserved from earlier.
Serve immediately!
