Ingredients:
400g linguine
2 tablespoons olive oil
2 garlic cloves, minced
1 onion, finely chopped
200g squid, cleaned and cut into rings
200g shrimp, peeled and deveined
200g scallops
150g mussels, cleaned
1 cup cherry tomatoes, halved
1/2 cup white wine
1 cup fish stock
Juice of 1 lemon
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Directions:
1. Cook linguine according to package instructions until al dente, drain, and set aside.
2. In a large skillet, heat olive oil over medium heat. Add garlic and onion, sautéing until translucent.
3. Add squid, shrimp, scallops, and mussels to the skillet, cooking until seafood is just done, approximately 3-4 minutes.
4. Pour in white wine and fish stock, bring to a simmer, and let cook for another 5 minutes.
5. Stir in the cherry tomatoes and cook until they are just starting to soften.
6. Add the cooked linguine to the skillet, tossing well to combine all ingredients. Cook for 2-3 minutes or until everything is heated through.
7. Remove from heat, squeeze in lemon juice, and garnish with fresh parsley. Season with salt and pepper to taste.
