Ingredients:
1 pound large shrimp, peeled and deveined
1 bunch asparagus, trimmed and cut into thirds
2 tablespoons olive oil
4 cloves garlic, minced
1 lemon, juiced and zested
Salt and pepper to taste
Red pepper flakes (optional)
Directions:
1. In a large skillet over medium-high heat, warm the olive oil.
2. Add the garlic and sauté for about 1 minute until fragrant.
3. Add the asparagus to the skillet and cook for 3-4 minutes, or until just becoming tender but still crisp.
4. Add the shrimp to the skillet and season with salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes on each side or until the shrimp are pink and opaque.
5. Stir in the lemon juice and zest, then cook for an additional minute to combine the flavors.
6. Serve immediately, garnished with additional lemon zest if desired.
