Ingredients:
1 lb chicken breast, thinly sliced
2 cups cooked rice, chilled
1 cup mixed vegetables (carrot, peas, and onion), diced
2 eggs, lightly beaten
2 tablespoons soy sauce
1 tablespoon sesame oil
2 tablespoons vegetable oil
Salt and pepper to taste
1 teaspoon garlic, minced
1 teaspoon ginger, minced
2 green onions, sliced for garnish
Sesame seeds, for garnish
Directions:
1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken, season with salt and pepper, and cook until browned and cooked through. Remove from the pan and set aside.
2. In the same skillet, add another tablespoon of vegetable oil. Add the garlic, ginger, and mixed vegetables, and sauté until the vegetables are just tender.
3. Push the vegetables to the side of the skillet, add the eggs to the empty side, and scramble.
4. Add the rice, cooked chicken, soy sauce, and sesame oil to the skillet. Stir everything together and cook for another 2-3 minutes until everything is heated through.
5. Serve garnished with green onions and sesame seeds.
