Ingredients:
4 large turkey wings, split at the joint
2 teaspoons kosher salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
2 tablespoons olive oil
1 cup chicken or turkey broth
1 onion, sliced
1 tablespoon cornstarch (optional, for thickening sauce)
Directions:
1. In a small bowl, mix together the salt, pepper, garlic powder, smoked paprika, onion powder, and dried thyme. Rub this spice mixture all over the turkey wings to ensure they're well-seasoned.
2. Heat the olive oil in a large skillet over medium-high heat. Sear the turkey wings for about 3-4 minutes on each side or until they're golden brown. This step isn't about cooking them through; it's about locking in those flavors with a good crust!
3. Transfer the browned turkey wings to the slow cooker. In the same skillet, sauté the sliced onion and minced garlic just until fragrant and tender, which should take about 2 minutes. Scatter the onions and garlic over the wings in the slow cooker.
4. Pour the chicken or turkey broth into the slow cooker, cover, and set to cook on low for 6-7 hours, or on high for 3-4 hours. When the meat is tender and almost falling off the bone, they're done.
5. If you desire a thicker sauce, mix a tablespoon of cornstarch with a tablespoon of water to create a slurry. Stir this into the cooking liquid during the last 30 minutes of cooking. It'll thicken up into a nice gravy as it simmers away.
