INGREDIENTS:
3 cups cooked rice (preferably chilled)
1 pound large shrimp, peeled and deveined
2 tablespoons vegetable oil
2 eggs, beaten
1 cup frozen peas and carrots, thawed
1 onion, diced
2 cloves garlic, minced
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
Salt and pepper to taste
Green onions, sliced, for garnish
DIRECTIONS:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add beaten eggs and scramble until cooked through. Remove from skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil. Add shrimp and cook until pink and opaque. Remove from skillet and set aside.
Add diced onion to the skillet and sauté until translucent. Add minced garlic and cook for another 30 seconds.
Stir in cooked rice, peas, and carrots. Cook, stirring occasionally, until heated through.
Return cooked shrimp and scrambled eggs to the skillet. Stir in soy sauce, oyster sauce, and sesame oil. Season with salt and pepper to taste. Cook for another 2-3 minutes.
Garnish with sliced green onions before servin
