INGREDIENTS:
2 tablespoons olive oil
1 lb large shrimp, shelled and deveined
4 cloves garlic, minced
1 cup heavy cream
1 cup mozzarella cheese, shredded
8 oz fettuccine pasta
1/4 cup fresh parsley, chopped
Salt and pepper to taste
DIRECTIONS:
Cook fettuccine pasta according to package instructions.
In a skillet, heat olive oil over medium heat. Add shrimp and garlic, cook until shrimp is pink.
Pour in heavy cream and bring to a simmer.
Stir in mozzarella cheese until melted and creamy.
Add cooked pasta to the skillet, toss to coat with the creamy sauce.
Season with salt and pepper. Garnish with fresh parsley.
