Ingredients:
- 1/2 lb large shrimp (peeled and deveined)
- 3 beaten eggs
- 1/4 cup chopped onion
- 3 cups cold cooked white rice
- 1/4 cup frozen peas
- 1/4 cup chopped broccoli
- 1/4 cup sliced carrots
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon sesame oil
- 1 teaspoon oyster sauce
Instructions:
1. Prepare Ingredients: Ensure the shrimp is peeled and deveined. Beat the eggs and chop the onion, broccoli, and carrots.
2. Cook Shrimp: Heat a pan or wok over medium-high heat. Add a bit of oil and stir-fry the shrimp until they turn pink and are cooked through. Remove them from the pan and set aside.
3. Cook Eggs: In the same pan, add a little more oil if needed and pour in the beaten eggs. Scramble them until cooked, then remove from the pan and set aside.
4. Stir-fry Vegetables: Add a bit more oil to the pan if necessary. Stir-fry the chopped onion, peas, broccoli, and carrots until they're slightly tender.
5. Add Rice: Once the vegetables are cooked to your liking, add the cold cooked rice to the pan. Break up any clumps and stir-fry everything together.
6. Season: Add salt, pepper, sesame oil, and oyster sauce to the rice mixture. Stir well to combine.
7. Combine Ingredients: Return the cooked shrimp and eggs to the pan with the rice. Stir everything together until heated through.
8. Serve: Once heated, your shrimp fried rice is ready to be served. You can garnish with chopped green onions, if desired.
