Ingredients:
- 1 package (16 ounces) shrimp, peeled and deveined, tail on
- 1 pound andouille sausages, thickly sliced
- 2 medium zucchinis, halved lengthwise and sliced
- 2 red peppers, cut into one-inch chunks
- 2 corn cobs, cut into one-inch rounds
- 2 large red potatoes, cut into 1 inch cubes
- 1/4 cup melted butter
- 2 tablespoons Cajun seasoning
- Fresh chopped parsley for garnish
Instructions:
1. Preheat your grill to medium-high heat or preheat the oven to 400°F (200°C).
2. Prepare four large sheets of heavy-duty aluminum foil (about 18x12 inches each) or double up regular foil for sturdiness.
3. In a bowl, mix the melted butter and Cajun seasoning together.
4. Divide the shrimp, andouille sausages, zucchinis, red peppers, corn rounds, and red potato cubes evenly among the foil sheets.
5. Drizzle the Cajun butter mixture over the divided ingredients, ensuring each foil packet gets an equal amount.
6. Seal the foil packets tightly, making sure to leave some room for heat circulation inside.
7. Grill the foil packets for about 15-20 minutes or bake them in the oven for approximately 25-30 minutes until the vegetables are tender and the shrimp is cooked through.
8. Carefully open the foil packets (watch for steam) and garnish with freshly chopped parsley before serving.
