THE INGREDIENTS NEEDED:
FOR THE CRUST:
1½ Cups.Of graham cracker crumbs.
½ Cup.Of finely chopped pecans.
⅓ Cup.Of melted butter.
¼ Cup.Of granulated sugar.
FOR THE CHEESECAKE FILLING:
3 (8oz) blocks.Of softened cream cheese.
1 Cup.Of granulated sugar.
3 large eggs.
1 Tsp.Of vanilla extract.
FOR THE PECAN PIE TOPPING:
1 Cup.Of chopped pecans.
½ Cup.Of packed brown sugar.
½ Cup.Of light corn syrup.
2 Tbsp.Of unsalted butter (melted).
2 Tsp.Of vanilla extract.
3 large eggs, lightly beaten.
PREPARATION:
1st Step
Make sure your oven has been set up at 325 degrees Fahrenheit (165 degrees Celsius). Get a springform pan that's 9 inches in diameter and grease it.
2nd Step
For the crust, mix together the graham cracker crumbs, pecan pieces, butter, and sugar in a large basin. Press the mixture evenly into the bottom of the prepared pan and stir until the consistency resembles wet sand. While you're making the filling, chill the pan in the fridge.
3rd Step
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. The eggs should be added one at a time and well mixed in between each addition. Mix in the vanilla extract well.
4th Step
Pour the cheesecake mixture into the springform pan with the cold crust and smooth the top with a spatula. Make it seem nice by smoothing the top.
5th Step
Bake the cheesecake for 50 to 60 minutes in the preheated oven, or until just set in the middle. After 10 minutes, take the cheesecake out of the oven.
6th Step
Make the pecan pie topping while the cheesecake is cooling. Chopped pecans, brown sugar, corn syrup, melted butter, vanilla essence, and softly beaten eggs should all be combined in a medium-sized bowl. Combine all of the ingredients well by mixing.
7th Step
Spoon the pecan pie topping over the cheesecake while it is still warm, spreading it out evenly.
8th Step
Bake the cheesecake for a further 25 to 30 minutes, or until the topping is firm and golden brown if using a pecan pie filling.
9th Step
After the cheesecake has finished baking, take it out of the oven and let it cool to room temperature. Then, to guarantee complete setting, chill it in the fridge for at least 4 hours or overnight.
10th Step
Carefully take off the sides of the springform pan and serve. If you'd like, you may sprinkle some more nuts on top of the cheesecake, or pour some caramel sauce on top.
