INGREDIENTS:
2 cups self-rising flour
1/2 cup low-fat shredded cheddar cheese
2 cloves garlic, minced
1 cup non-fat plain Greek yogurt
1/4 cup unsweetened almond milk (or any other low-fat milk)
2 tablespoons light butter or margarine (for brushing)
1/4 teaspoon garlic powder
Fresh parsley, chopped (optional, for garnish)
INSTRUCTIONS:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the self-rising flour, minced garlic, and shredded cheddar cheese.
Add the non-fat plain Greek yogurt and almond milk to the dry ingredients. Stir until a dough forms. If it’s too dry, you can add a little more milk, but be careful not to make it too sticky.
Turn the dough out onto a lightly floured surface and knead it a few times until it comes together. Roll or pat it out to about 1/2-inch thickness.
Use a biscuit cutter or a glass to cut out biscuits from the dough. Place them on the prepared baking sheet.
Melt the light butter or margarine and stir in the garlic powder.
Brush the garlic butter mixture over the tops of the biscuits.
Bake in the preheated oven for about 10-12 minutes or until the biscuits are golden brown and cooked through.
If desired, sprinkle some chopped fresh parsley over the top for added flavor and color.
