INGREDIENTS:
1/4 tsp each nutmeg, allspice, cardamom
Salt and freshly ground black pepper
4 1/2 Tbsp butter, divided
2/3 cup finely chopped yellow onion (1/2 medium)
1 tsp minced garlic (1 clove)
1/4 cup milk
2 large egg yolks
3/4 lb 85% lean ground beef
3/4 lb ground pork
3 1/2 Tbsp all-purpose flour
2 cups low-sodium beef broth
1/3 cup heavy cream
1 tsp Worcestershire sauce
1 Tbsp minced fresh parsley (optional)
DIRECTIONS:
Preheat oven to 400 degrees. Line an 18" x 13" rimmed baking sheet with aluminum foil and spray with nonstick cooking spray.
In a large mixing bowl, combine breadcrumbs, nutmeg, allspice, cardamom, 1 teaspoon salt (or to taste), and 1/2 teaspoon pepper. Pour in the milk and mix with a fork, let stand while the onions are sautéed.
Melt 1 tablespoon butter in a 12-inch skillet over medium-high heat. Add the onion and sauté until softened and lightly golden, about 6 minutes, adding the garlic in the last 30 seconds.
Add the beef and pork to the breadcrumb mixture along with the egg yolk and onion mixture. Stir the mixture gently to distribute the ingredients evenly.
Scoop 30 grams of dough out of the dough (use a medium cookie scoop or just under 2 tablespoons at a time) and form into balls. Spread evenly on prepared baking sheet.
Bake in preheated oven until cooked through (an instant-read thermometer should read 160 degrees in the center), about 18-22 minutes.
Meanwhile, in the same skillet used to sauté the onions, melt the remaining 3 1/2 tablespoons butter over medium-high heat. Add flour and cook, stirring, until golden brown, about 2 - 3 minutes.
Slowly pour in broth and cream while stirring. Add Worcestershire sauce and season with salt and pepper.
Bring to a boil over medium-high heat, stirring constantly. For a thicker consistency, simmer over low heat for a few minutes.
Toss the meatballs into the warm sauce and sprinkle with parsley. Serve hot with your choice of egg noodles or mashed potatoes and cranberry jam.
