Ingredients :
150g pitted dates, roughly chopped into small pieces
25g light brown soft sugar
3 bananas, peeled and roughly chopped (about 250g)
3 eggs
200g strong wholemeal flour
2 tsp baking powder
¼ tsp bicarbonate of soda
Directions :
Preheat oven to 180°C and line a baking sheet with parchment paper
In a heatproof bowl, combine chopped dates, butter, sugar and 75ml of boiling water, gently stir ingredients, soak and melt for 5 minutes.
Put the contents of the bowl in a food processor and add the sliced bananas and eggs. Lightning beat until smooth, then pour mixture into a medium mixing bowl.
Sift the flour, baking powder, and baking soda into the mixture and whisk vigorously with a wooden spoon until well combined.
Pour the batter into the pan and bake the cake in the oven for 1 hour.
Remove the pan from the oven, let it rest for 10 minutes, then remove the slices.
