DIRECTIONS:
Place bacon and chopped spices on a sheet pan lined with foil. Wrap tightly and place in an oven preheated to 375º for one hour. (You can cook your meat however you like.)
Put the red beans in a large, heavy saucepan with about 2 liters of water. Add salt, pepper and bay leaves. Cook over medium heat for about an hour.

Remove bacon and spices from oven and carefully add meat, vegetables and liquid to beans. Taste, cover and turn heat to medium-high.
(You'll need to stir the beans occasionally, and add some water to the pot if needed.) Cook for another hour and a half or so, until the beans are soft and tender and the broth thickens.
